【比米芝蓮信得過?】9間港餐廳打入亞洲50大餐廳 無星大班樓奪第22位(附完整名單)

2018年度亞洲五十佳餐廳名單(World's 50 Best Restaurants)3月27日在澳門永利酒店揭曉,今年共有9間香港餐廳入圍。而在米芝蓮沒有奪星的大班樓和Neighborhood,分別排第22位及第32位,其餘入圍則有Caprice、Ronin、Ta Vie、龍景軒、Amber、8½ Otto e Mezzo BOMBANA及Belon,其中法國菜Amber排名最高,排第7。

大班樓是走時尚路線的高級粵菜館,以手工粵菜聞名,追求粵菜精髓,重原味,從不啤水、不放梳打粉或加味精,不賣鮑參翅肚。配搭不拘一格,常有驚喜,招牌菜有龍丼杭菊煙燻乳鴿、陳皮炆澳洲牛尾。最近更與80後佛山私房菜「壹零貳小館」合作推出菜單,休業3日請朋友食飯,重現五彩豬肚,在日本1984年出版的廣東食譜《中國名菜集錦》找到製法,據原本做法只有皮蛋、豬肚、鹹蛋、瘦肉、火腿、豬皮、芫茜,現加以改良,以牛筋取代芫茜,火腿需醃一星期,整個製作需時三日。另外,一口咕嚕肉,以肥豬肉包着菠蘿,以古法製作,並加入新意。人均消費$1000起。

大班樓

中環九如坊18號地下

Neighborhood 藏身於中環荷李活道地庫,每道菜百多元,偏向以tapas般的份量供應,很親民。老闆黎子安( David)出身自法國菜,是當年洲際酒店Spoon開店大廚之一,亦是歌賦街On Lot 10(周星馳飯堂)的老闆,愛穿簡單白tee的他作風低調。他不拘泥於菜式分類,菜牌每星期都會轉換,用料新鮮,經常以街市買來的食材烹調,每次都帶來驚喜。招牌菜有馬賽魚湯,單是以多款海鮮來熬製的魚湯已屬高成本製作,人均消費$800起。
